SERRANO HAM-WRAPPED SPANISH POTATOES
with Two Hot Mama’s Creamy Cilantro Salsa Dip
(Party of 4)
Ingredients:
1 – lb. Baby New Potatoes
1/2 – lb. Serrano Ham (thinly sliced)
2 – tbsp. salted butter (room temp)
2 – tbsp. Extra Virgin Olive Oil
1/2 – White Onion (julienne sliced)
1 – Cup Mild Cheddar Cheese (shredded)
4 – ozs. Two Hot Mama’s Creamy Cilantro Salsa Dip
1/2 – Bunch Fresh Cilantro (finely chopped)
1 – tbsp. Spanish Paprika (ground)
1 – tbsp. Cumin (Ground)
Oven Method:
- Preheat oven to 350 degrees F;
- Rinse and drain Baby New Potatoes (do not allow to completely dry);
- Line bottom of oven-safe casserole or baking pan (9” x 13”) with the Extra Virgin Olive Oil;
- Wrap each potato in a small slice of Serrano Ham and arrange in pan;
- Add White Onion on top throughout;
- Add (in different sections) butter;
- Season with Spanish Paprika and Cumin;
- Cover and Bake for 25-30 minutes or until potatoes are soft;
- Uncover and sprinkle the Mild Cheddar Cheese over the whole dish;
- Recover (elevated) and bake for an additional 10 minutes;
- Remove from oven, uncover and transfer all on to a warm serving platter or plate immediately;
- Drizzle with Two Hot Mama’s Creamy Cilantro Salsa Dip on top;
- Garnish to liking with Fresh Cilantro.
