HUEVOS RANCHEROS TOSTADAS:
with Two Hot Mama’s Mambo Combo Salsa

(Party of 2)

Ingredients:

4 – Eggs
8 – ozs. of Two Hot Mamas Mambo Combo (Hot)
4 – White Corn Tortillas
7 – tbsp. Extra Virgin Olive Oil
1 – tsp. Coarse Sea Salt (sub Kosher)
1 – tsp. Coarse Black Pepper
8 – ozs Refried Pinto Beans

Stove-Top Method:

  1. Place 6 ounces of Olive Oil into an 8” frying pan and heat to 350 degrees;
  2. Fry each tortilla until crispy on both sides. Place tortillas on a paper towel and set aside;
  3. Warm or prepare refried beans to your liking;
  4. In a new 6” frying pan, heat 1 ounce Olive Oil to a medium high heat and cook eggs over-easy;
  5. Place two “tostadas” on each plate and top one egg on each tortilla;
  6. Add 4 ounces of Two Hot Mamas Mambo Combo (Hot) over each egg/tostada;
  7. Add 4 ounces of refried beans to each plate and salt and pepper to your liking.

Tip:

Warm salsa in microwave for 30 seconds before topping over eggs.
